Even though low-carb marshmallow fluff may sound pretty unrealistic, this keto recipe is very simple and straightforward. To make it, you'll need only four ingredients. All of them can be found in any grocery store.
Here's what you should prepare for this low-carb marshmallow fluff recipe:
- Gelatin: make sure that you get unflavored and sugar-free gelatin. I usually always use the Knox gelatin;
- Powdered sweetener: my all-time favorite is the powdered monkfruit sweetener with erythritol, so I used it for this recipe as well. But if you don't have such a sweetener, you can definitely substitute it with allulose powder;
- Sugar-free honey: I used the Wedderspoon raw Manuka honey, but you can use any other honey brand that you like;
- Water: you'll need some hot water to mix the gelatin in and some additional water to make the hot sweetener syrup;
That's it. Additionally, if you like the taste of vanilla, you can add a teaspoon of vanilla extract into the sweetener syrup.

How to Make Keto Marshmallow Fluff
Before you start making this marshmallow fluff, I must tell you one more thing: when you make homemade marshmallow fluff out of gelatin, it will differ a lot from the traditional marshmallow fluff. It is a great alternative, but the overall taste is pretty different.
To make this marshmallow cream, you'll need to prepare a hand mixer, a large bowl, and a saucepan. Once you've gathered everything, you can move on to the main part: making this delicious vegan marshmallow fluff.
Let me walk you through the main steps of the cooking process:
- Mix the gelatin with hot water. Just empty the gelatin envelope into a large bowl, add the hot water, and stir it.
- Prepare the hot sugar syrup. To do this, you should place the powdered sweetener, honey, and the rest of the water into a saucepan. Then place the saucepan over medium heat and wait for everything to boil. Stir the sauce from time to time and boil for a minute.
- Make the fluff. Now, prepare your hand mixer and while slowly pouring the hot syrup into the gelatin mixture, beat everything together on medium heat. It should take you about 6 to 8 minutes to make the marshmallow fluff.
If you see that while mixing the fluff became too hard, you should place it into the microwave for 10 seconds. Then either serve or beat a bit more until needed.

Storing Instructions
If you have any keto marshmallow fluff leftovers, you should place them in an airtight container and then in your refrigerator. You can store them in such a way for up to a week. And then, whenever you want to serve it, you should place the marshmallow fluff into your microwave and heat it up for about 30 seconds. If it turns out too watery, you should use your hand mixer to beat it for a minute or two until the desired texture.
I do not recommend freezing the low-carb marshmallow fluff since it will completely lose its texture, and there's nothing that can help restore it. So it's much easier to make a fresh keto marshmallow fluff.
