Is Queso Keto-Friendly?

It depends on the ingredients that were used to make the queso dip. If you make it following this recipe, then your queso will definitely be compatible with the keto diet. One serving of this Mexican cheese dip contains only 2 grams of carbs, which is a perfect number of carbs for a keto meal or quick snack.

Here's What You Need

I wanted to keep the ingredient list as simple as possible and get delicious results at the same time. So here are the seven ingredients that you should prepare for this keto queso cheese dip:

  • Shredded cheese
  • Milk
  • Heavy whipping cream
  • Garlic powder
  • Turmeric
  • Chili powder
  • Salt

Optionally, if you want to get an even richer and creamier texture, you can substitute one cup of shredded cheese with one cup of cream cheese.

That's it! Once you've gathered everything, you can choose the cooking method and start making your keto queso.

Two Cooking Methods Explained

There are two ways you can go about making this keto queso: either cook it on the stovetop in a pan or use a Crock Pot (or an Instant Pot cooker). The main difference between these methods is that the first one is much quicker. However, the latter is a great option if you want to make the keto queso but need to run some errands.

So let me give you brief instructions for both of the cooking methods.

Method #1. Stovetop

Prepare a small cooking pot or a deep skillet and follow these instructions to make this keto cheese sauce:

  1. Place the skillet or pot over medium heat.
  2. Pour in the heavy cream and milk and wait for them to boil.
  3. Add the spices and cook for a minute or two.
  4. Add the cheese and cook until it melts completely.

By cooking keto queso using this method, you'll spend somewhere around 10-15 minutes tops. But this method does require you to stay close to the stovetop and stir everything, so it doesn't burn.

Method #2. Crock Pot

If you don't even have those 10 free minutes to make the keto queso on your stovetop, you can use this method. And trust me, even though it will take you longer to make the keto queso in a Crock Pot, it's definitely worth it since it turns out even more flavorful.

Here's how to make your low carb queso in a Crock Pot:

  1. Add all of the ingredients into your crockpot.
  2. Cook on low for 2 hours (once it's half cooked, stir it).

And that's it! Now you can serve your keto-friendly queso.

Ways to Serve

You should serve this Mexican cheese dip right away after making it or reheat it if it's already cold. The best thing about this dip is that you can serve it with almost anything (well, of course, as long as it is low-carb).

Here are some serving ideas for you to try:

  • Raw veggies: cauliflower, broccoli, celery, or anything else that you like the most;
  • Air fryer radishes
  • Drizzle over some rutabaga fries
  • Homemade keto tortilla chips
  • Pork rinds
  • Keto crackers

You can even make these low-carb cheese shell tacos and simply pour some of the queso over them (and don't forget to add some taco seasoning to the keto dip). That's definitely something you won't be able to say NO to.

Storing Tips

You can store your keto queso dip leftovers in an airtight container in the refrigerator for up to 2-3 days. Then whenever you're thinking of serving it, just place the container in your microwave for a few minutes and stir before serving to make sure that all of it melted.

I do not recommend freezing this low-carb cheese sauce since it's made mostly of dairy, and there is a chance that it won't have the same smooth texture once out of the freezer.

  • 2 cups Mexican style blend cheese
  • ½ cup milk
  • 1 pint heavy whipping cream
  • ½ tsp garlic powder
  • ½ tsp turmeric
  • ½ tsp chili powder
  • ½ tsp salt

Instructions
 

  • Place a skillet or a small cooking pot over medium heat. Pour in the milk and heavy cream. Stir occasionally until it boils.
  • Add the garlic powder, turmeric, chili powder, and salt — and stir. Cook for a few more minutes.
  • Add the cheese blend and stir until the cheese melts completely. Serve hot.
