Chocolate chip cookies are a simple snack to bake at home. The freshly baked version is hard to beat; straight from the oven, warm, melted chocolate - what's not to love about them?

Everyone enjoys their cookies a different way; this recipe is for those that like them with a bit of lift. If you love flat cookies then simply leave out the baking powder and skip chilling the cookie dough in the fridge.

We also included nuts for some extra flavor and texture but it works fine leaving these out. Nuts aren't everyone's idea of a necessary ingredient for chocolate chip cookies.

Ingredients
  

  • 175 g softened butter or 6oz
  • 175 g light brown sugar or 6oz
  • 1 egg
  • 1 tsp vanilla extract
  • 2 ½ cups all purpose flour 350g or 12oz
  • baking powder
  • 1 pinch salt
  • 110 g chocolate chips
  • 110 g nuts or 4oz (optional)

Instructions
 

  • Preheat oven to 350F (180C) and line a baking tray with parchment paper.
  • Add butter and sugar to a large bowl and whisk or use an electric beater for 1 minute until smooth. Add eggs, vanilla and beat until combined.
  • Use a wooden spoon to mix in the flour, baking powder, salt, choc chips and nuts.
  • Combine dough into a disc and wrap with plastic wrap. Chill in the fridge for an hour.
  • Remove dough from fridge and create small balls of mixture. Place each ball with sufficient space to allow the cookies to spread.
  • Bake on the middle rack in an oven for 12-15 minutes or until golden brown. Allow to cool for a few minutes before transferring to a wire rack to cool completely.

7 Tips for baking chocolate chip cookies

  1. Refrigerating the dough before cooking will help the dough stay together rather than flattening out.
  2. Don't be afraid to create extra large cookies that are virtually impossible to resist.
  3. Instead of baking 12 small cookies, bake one large one in a skillet pan which everyone can devour while still warm.
  4. For more visual appeal, use an extra half cup of chocolate chips to decorate the top of the cookies.
  5. Use salted butter for more flavor.
  6. Half melt butter in the oven rather than the microwave to give the cookie better structure.
  7. Add half dark and half white chocolate chips for a better tasting biscuit.
